Italian Cannellini Beans

Cannellini beans are the white beans of Tuscany, the ones that appear in Ribollita, the Florentine soup that combines beans, kale, tomatoes and bread. These silky medium-sized beans retain their shape even when absolutely tender. Try them in Tuna & White Bean Salad or mashed for crostini.
