The monarch of Greek olives, the purple-brown Calamata is marinated with crushed hot red chilis to create Pitted Calamata Piccante. The mildly spicy chilis enhance the Calamata's well-known complex, smoky flavor. These olives are pitted for convenient use in pasta dishes, omelets or tapenade.
