This traditional Italian cookie has its roots in Lombardy, where Amaretti are most often enjoyed with espresso or coffee. These almond biscuits are made of little ingredients and take little to no time to prepare.
- 7 ounces almonds
- 1 cup sugar
- 1/4 cup all-purpose flour
- 2 egg whites
- 1 teaspoon vanilla extract
Preheat oven at 350˚F.
In a food processor, pulse almonds and sugar until almonds are roughly chopped. Add flour, egg whites and vanilla. Blend until combined and a paste is formed.
Roll mixture into tablespoon-sized balls and place on a parchment-lined baking sheet.
Bake for about 12 minutes, or until cookies turn golden. Cool before serving.
