  • In a large bowl, create a marinade by whisking together the olive oil, pesto, salt, pepper, lemon zest and lemon juice. Marinate chicken breasts for an hour (up to 1 day).
  • Place egg whites in shallow bowl. In a separate dish, combine breadcrumbs and cheese. Dip each chicken in egg whites to coat, then dredge in breadcrumb and cheese mixture. Set aside on a clean plate.
  • Preheat oven to 375˚F. Line a baking sheet with parchment paper.
  • In a large skillet, heat Extra Light Olive Oil on a medium-high setting until hot. Pan-fry each breast until lightly golden on each side.
  • Bake chicken breasts on baking sheet for 10-12 minutes, until cooked through and juices run clear. Remove from heat.
  • Serve with fresh lemon slices and a smear of pesto.
