Blazing Shrimp Bruschetta

3rd Place Prize Winning Recipe of the 2010 DeLallo Italian Recipe Contest.  Bruschetta can be as simple as toasted bread with olive oil and garlic or as elegant and spicy with creativity as this recipe. Our Imported Hot Pepper and Garlic sauce is an oil-based sauce that is tossed with tender shrimp and fresh green parsley. This is a perfect recipe for guests; it presents well, it's easy to prepare, and is delicious and unique. Our choice for 3rd Place.

Ingredients:

  • 1 baguette, cut diagonally into 1/2-inch-thick slices
  • 1/4 cup Delallo Extra Virgin Olive Oil
  • 1 pound cooked shrimp, peeled, deveined and coarsely chopped
  • 1/2 cup Delallo Hot Pepper Garlic Sauce
  • 1 1/2 tablespoons Delallo Imported Italian Red Wine Vinegar
  • 1/4 cup grated DeLallo Asiago cheese
  • 2 tablespoons chopped fresh parsley

Directions:

Preheat oven to 375˚F. Place baguette slices on baking sheet and brush lightly with olive oil. Bake approximately 8 minutes, until lightly browned. Set aside to cool.

Place chopped shrimp, hot pepper & garlic sauce, vinegar, Asiago cheese and parsley in a medium bowl, and mix well. Spoon a heaping tablespoon of shrimp mixture onto each bread slice. Arrange on platter and serve.
