  • Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions.
  • Meanwhile, in a large saucepan, melt butter over medium heat. Add zucchini, squash, corn and garlic. Cook until tender, about 8 minutes.
  • Remove from heat. Stir in mascarpone, basil and pesto, until cheese has melted. Add gnocchi and toss to coat. Serve sprinkled with lemon zest.
