Crunchy Parmesan Chicken

Parmigiano-Reggiano stands in for breadcrumbs in this savory chicken dish with a crunchy and salty baked crust. Perfect for a quick dinner served atop a salad of fresh spinach or paired with your favorite pasta and red sauce.
 

Ingredients:

  • 4 chicken breasts, trimmed & pounded lightly
  • 3 egg whites, lightly beaten
  • 2 cups finely grated Parmigiano-Reggiano, or DeLallo Parmesan

Directions:

Preheat oven to 400˚ F.

In a shallow bowl, coat chicken with egg whites. In another shallow dish, press chicken breasts into Parmesan cheese. Arrange chicken on a baking sheet. Bake until crisp and golden, about 20 minutes.

Serve with your favorite side of salad or pasta.
