Italian Strawberry Rice Pudding

Our rice pudding is garnished with fresh, seasonal strawberries and a hint of cinnamon for the perfect Italian dessert. Creamy and flavorful, this dish will win the hearts of any crowd—young and old, alike!

Ingredients:

  • 2 1/4 cups whole milk
  • 1/2 cup uncooked DeLallo Risotto Arborio Rice
  • 1 cinnamon stick
  • 6 tablespoons sugar
  • Pinch of salt
  • 1 1/2 tablespoons unsalted butter
  • 1/2 pound strawberries, trimmed and halved
  • Cinnamon (optional)

Directions:

In a large saucepan over medium-high heat, bring 1 cup of water and 2 1/4 cups of milk to a boil. Add rice, cinnamon stick, 5 tablespoons of sugar and a pinch of salt to mixture. Reduce heat and simmer until rice is tender and creamy, about 40 minutes. Discard cinnamon stick and remove from heat.

Meanwhile, in a separate saucepan over medium heat, melt butter. Stir in halved strawberries and 1 tablespoon of sugar. Stirring often, cook for about 3 minutes, or until strawberries become tender. Remove from heat.

Transfer rice to a glass baking dish and chill. Serve in bowls topped with strawberries and cinnamon, if desired.
