Gnocchi with Sausage - Malloreddus

Malloreddus (Gnocchi with Sausage)

Malloreddus is the name of a pasta shaped like gnocchi, only smaller--also called, gnocchetti sardi. In this traditional Sardinia dish, we'll be substituting with our tasty imported Italian gnocchi.

Ingredients:

  • 2 tablespoons DeLallo Extra Virgin Olive Oil
  • 2 cloves garlic, smashed
  • 1 pound ground DeLallo Sweet Italian Sausage
  • 2 teaspoons loose saffron threads
  • 1/4 cup fresh chopped basil
  • 2 (12-ounce) cans of DeLallo Imported Italian Diced Tomatoes
  • 1 (1-pound) package DeLallo Potato Gnocchi
  • DeLallo Natural Sea Salt
  • Freshly ground black pepper
  • 1/4 cup DeLallo Grated Pecorino Romano

Directions:

Heat the oil in a large saucepan over medium-heat. Add the garlic and sausage. Fry, stirring frequently, until the sausage is cooked through. Remove and discard the garlic. 

Add 1 teaspoon of the saffron threads, basil, diced tomatoes. Season with salt and pepper. Bring the mixture to a simmer and reduce the heat to medium-low. Cover and continue simmering for about 15 minutes.

Meanwhile, bring a large pot of salted water to a boil. Add gnocchi and 1 teaspoon of saffron to the boiling water and cook gnocchi according to the package instructions. Remember, gnocchi will float to the surface when finished cooking. Once finished, drain and toss with sauce in saucepan for about 2 minutes to coat.

Serve topped with Pecorino Romano.
