Mediterranean Vegetable Platter

All of the flavors that make Mediterranean cuisine so famous are found in this tasty platter of fresh vegetables: smooth buttery potatoes, briny feta, savory tart olives and more! Topped with a fresh red wine vinaigrette, there isn't much this salad doesn't offer...

Ingredients:

Dressing:

  • 1/3 cup DeLallo Red Wine Vinegar
  • 2 tablespoons chopped fresh oregano or 3/4 teaspoon dried
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 cup DeLallo Extra Virgin Olive Oil

Salad:

  • 2 small cucumbers, cut into 2-inch quarters & skinned
  • 4 tomatoes, seeded and diced
  • 1 red onion, thinly sliced
  • 1 (12-ounce) jar DeLallo Marinated Artichoke Hearts
  • 8 small red potatoes, steamed & quartered
  • 1 pound young green beans, trimmed & steamed
  • 3/4 cup DeLallo Olive Medley
  • 4 ounces crumbled DeLallo Feta
  • 2 teaspoons DeLallo Nonpareil Capers
  • 2 teaspoons chopped Italian flat-leaf parsley

Directions:

In a mixing bowl, combine vinegar, oregano, salt and garlic. Slowly whisk in olive oil to fully incorporate.

Combine cucumbers, tomatoes, onions and artichokes in a large bowl. Spoon mixture into a shallow serving platter around potatoes and green beans. Drizzle platter with dressing. Serve garnished with olives, feta, capers and parsley.
