Pasta Squares with Peas in Broth

Create pasta squares using our No-Boil Lasagna and serve a soup with a unique presence. With savory pancetta, sweet peas and Parmesan, this is one recipe you'll want to keep on hand for those cold, winter days.

Ingredients:

  • 3 tablespoons butter
  • 1/2 cup chopped DeLallo Pancetta
  • 1 small onion, finely chopped
  • 4 cups frozen peas, thawed
  • 1 teaspoon DeLallo Tomato Paste
  • 5 cups chicken stock
  • 1 (9-ounce) package DeLallo No-Boil Imported Lasagna, broken into squares
  • Salt and pepper
  • DeLallo Grated Parmesan

Directions:

Melt the butter in a large saucepan and add the pancetta along with the onion. Cook over low heat until the onions become soft, about 5 minutes.

Add the tomato paste and the chicken stock. Bring to a boil. Drop in the lasagna squares a couple at a time, while stirring to keep them separated.

Cover and let simmer for 10 minutes or until the noodles are cooked. Add salt and pepper to taste. Add the peas and simmer for another 2 minutes.

Serve hot in warmed bowls with grated Parmesan on top.

Adding the peas last allows them to keep their bright green color and crisp flavor. If you add them earlier they will lose color.
