A traditional Sicilian tomato sauce with briny green olives, sauteed anchovies and spicy chili pepper, Puttanesca boasts a unique Southern Italian flavor that can pair with nearly any cut of pasta. Ingredients:
Directions:Heat the olive oil in a large pan. Add the onion, garlic, chili pepper, and anchovies. Cook over medium heat until the anchovies break down and melt, about 5 minutes. Add the olives and capers, and sauté together for another minute. Add the tomatoes, water, and salt and peppers to taste. Stir and bring to a boil, then lower the heat to a simmer for 20 minutes, stirring occasionally. Meanwhile, bring 5 quarts of water to a boil, add salt. Drop in the pasta, stir and cover the pot. When the water returns to a boil, remove the lid and cook until al dente. Drain the pasta lightly, reserving 1/2 cup of pasta water for finishing sauce. Toss pasta with sauce in the saucepan. Toss well for 2 minutes, with the heat on high. Add reserved pasta water, if desired. Serve immediately. Serves 4 |
