Pepperazzi™ Aioli

Aioli is a zesty, garlicky mayonnaise typically enjoyed as a sauce for seafood. It is made by slowly whisking oil in egg yolks and garlic.

Ingredients:

  • 1/2 cup DeLallo Pepperazzi™, well-drained & chopped
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon DeLallo Natural Fine Sea Salt
  • 1 cup DeLallo Extra Virgin Olive Oil
  • 2 extra large egg yolks
  • Juice of 1 fresh lemon

Directions:

In a food processor, purée Pepperazzi™, garlic, salt and 2 teaspoons of olive oil until creamy, about 2 minutes. Add egg yolks and lemon juice and blend until smooth. With the machine running, slowly add the remaining olive oil in a thin steady stream until the mixture forms a thick emulsion, approximately 2 minutes.

Adjust seasoning to taste. Transfer to a clean container, cover and refrigerate until ready to use.
