Roasted Balsamic Fig Salad with Blue Cheese

A sweet and spiced balsamic glazed fig is roasted to enhance it's flavor and paired with a pungent blue cheese and crunchy green lettuces.

Ingredients:

4 large fresh black mission figs

2 Tbsp DeLallo Balsamic Vinegar

3 tsp brown sugar

1/8 tsp ground cinnamon

1/4 cup DeLallo Extra Virgin Olive Oil

Juice of 1/2 lemon

1/2 tsp Dijon mustard

1/2 pound blue cheese, cut into 4 wedges

6 cups mixed salad greens

salt and pepper

 

Directions:

Cut the stems off the end of each fig.  Slice the figs in half. 

In a small mixing bowl, mix the balsamic vinegar, brown sugar and cinnamon
together.  Add the figs and toss to coat evenly.  Allow the figs to
rest in the marinade for at least 15 minutes.

In the meantime, heat a grill pan.  Drizzle some olive oil on the pan if it
is not non-stick.  When ready, place the figs on the grill pan, reserve
the remaining marinade.  Turn the figs to the other side to grill once you
see grill marks.

In the bowl with the remaining marinade, add the Dijon mustard and lemon
juice.  Then slowly whisk in the olive oil.  

Season the salad greens with salt and pepper.  Toss the salad with the
dressing.  Serve two fig halves on top of each salad and a blue cheese
wedge.
