Roasted Balsamic Fig Salad with Blue Cheese

Sweet and spiced balsamic glazed figs are roasted, then paired with pungent blue cheese and crisp, leafy greens. It's one salad you won't soon forget. Ingredients:
Directions:Cut the stems off the end of each fig, then slice each fig in half. In a small mixing bowl, mix the balsamic vinegar, brown sugar and cinnamon together. Add the figs and toss to coat evenly. Allow the figs to rest in the marinade for at least 15 minutes. In the meantime, heat a nonstick grill pan for figs. Drizzle with extra virgin olive oil, if your pan is not nonstick. Once hot, place the figs on the grill pan, reserving the remaining fig marinade. Turn figs to ensure even cooking. In the bowl with the remaining marinade, add the Dijon mustard and lemon juice. Slowly whisk in the olive oil. Season the salad greens with salt and pepper, then toss with the dressing. Serve 2 fig halves on top of each salad with a blue cheese wedge. Serves 4 |
