Directions:Preheat the oven to 350˚F. Mix goat cheese and fresh spinach in a small bowl. Season with salt and pepper. Gently stuff the piquillo peppers with the cheese mixture. Be careful not to split them. Lay the peppers in a baking pan and sprinkle the garlic on each pepper, then drizzle with olive oil. Bake for 7 to 10 minutes until the cheese softens. Serves 4 to 6 |
