Salvia Fritta con Acciughe - Fried Sage with Anchovies

A new bite-sized antipasto for your guests! Aromatic sage combined with the salty, savory flavor of anchovies, then fried to a crisp, golden brown for a unique snack.

Ingredients:

  • 20 DeLallo Flat Fillet Anchovies
  • Iced sparkling water
  • 1 cup all-purpose flour
  • 30 to 40 large sage leaves
  • DeLallo Extra Virgin Olive Oil, for frying

Directions:

In a large bowl, add just enough water to create a medium-thick batter, bit by bit, to the flour and whisk briskly. Use iced sparkling water, if possible—the effervescence is helpful, but not necessary; just ice cold tap water can be used as well.

Place one anchovy on top of a sage leaf and then sandwich it with another leaf; press gently. Dip the two stuffed sage leaves into the batter and quickly fry them in hot oil until they are a light golden color, picking them up with a slotted spoon. Dry them over paper towels, add a pinch of salt on top and serve warm.
