Salvia Fritta con Pecorino - Fried Sage with Pecorino

This tasty appetizer combines simple ingredients to create a fun, new addition to your party platter. Try serving alongside bruschetta at your next gathering.

Ingredients:

  • 1 tablespoon of flour
  • 2 tablespoons of milk
  • 2 eggs
  • 30 large sage leaves
  • 15 thin slices (called ostie, which literally means "communion wafer") of pecorino toscano or sardo cheese
  • DeLallo Extra Virgin Olive Oil

Directions:

Place the flour in a large mixing bowl. Whisk with milk until well blended. Add the eggs, whisking continuously.

Warm olive oil in a saucepan on medium heat. One at a time, dip each leaf into the batter, then top with a shaving of pecorino and then another dipped leaf; press gently to sandwich the cheese, and quickly fry in the hot oil until golden. Serve warm.
