Salvia Fritta - Fried Sage

Fried sage will be a unique and tasty addition to your repertoire of bite-sized appetizers for your guests, or as a special complement to your bruschetta plates.

Ingredients:

  • Iced sparkling water
  • 1 cup all-purpose flour
  • 30 to 40 large sage leaves
  • DeLallo Extra Virgin Olive Oil, for frying

Directions:

In a large bowl, add just enough water to create a medium-thick batter, bit by bit, to the flour and whisk briskly. Use iced sparkling water, if possible—the effervescence is helpful, but not necessary; just ice cold tap water can be used as well.

Dip the sage leaves in the batter and quickly fry them in hot oil until they are a light golden color, picking them up with a slotted spoon. Dry them over paper towels, add a pinch of salt on top and serve warm.
