Olive Colors | The Color of California Olives
In the third segment of our series on California Olives, we learn that all olives are green while they’re growing, but different varieties turn different colors at maturity. For example, Calamata olives are harvested when they are deep purple, while the Sevillano is ripe when it turns light green to straw color. Calamata olives and Sevillano olives are just two of the many varieties available in our Olive Catalogue. Ever been to an olive orchard?
