All olives start off green when they’re growing, but they mature to black, brown, purple or other colors, as you’ll see from the bowls of glistening olives in our kitchen. There are many ways to cure an olive, including saltwater baths, air drying and packing the olives in salt. Different curing methods are used for different varieties of olive, and each results in a unique flavor and texture.
