Fresh Handmade Pasta Shop - The Pastificio

Our first stop is the Pastificio, where dozens of kinds of pasta are made by hand. Each glass case is stuffed with an amazing array of pastas, including troffie, tagliatelle spezzate, tortellini, agnelotti, gnocchi, paglia e fineo and lasagna verdi di Bologna. We watch as the pasta maker creates the stuffed pasta called cappellacio (listen for Piergeorgio’s translation of this pasta’s funny name). Next she makes tagliatelle, the pasta eaten most often in Bologna. Armed with some terrific handmade pasta, we move on. Next we must choose something for the fish course—so it’s off to the fishmonger.
