How to Make a Smooth Pasta Sauce
In this segment, Giuliana walks us through the steps to make a smooth tomato sauce for pasta. First she gets the battuto together—the vegetables or fresh herbs used at the beginning of the sauce to start the layering of flavors. The minced celery, carrots, onion and garlic go into the hot Extra Virgin Olive Oil to become our soffritto, a term that means ‘lightly fried.’ Then Giuliana shows us how to tell when your soffritto is ready for the next step, and how to mill the tomatoes in a food mill to create ‘passata.’ After adding the tomatoes to the soffrito, she turns up the heat.
