Macellaio - The Italian Butcher Shop

In the beautiful display case at the Macellaio, or butcher shop, we see many delicious cuts of meat. As Piergiorgio tells us, “Every cut of meat is beloved here.” The shop offers fiorentina (known a T-bone steak in the U.S.), bistecca, tenderloin, ground meats of all kinds, fresh sausages and delicacies like veal brains, much prized in Bologna.
