Spicy Vegetarian Pasta Salad

Are you ready for the world’s easiest pasta salad recipe ever?

You see, I’m a spicy food fiend. If it’s spicy, I want it.

Hot sauce is on the dinner table almost every night. Copious amounts of red pepper flakes get dumped into my marinara. Tacos are loaded with the spiciest salsas I can find. I was eating pepperoncini when I was three.

If I’m not sweating, it’s not hot enough.

I’m only half joking here, people. I love the spice!

That’s why I was over the moon to find DeLallo’s Hot and Spicy Pesto. One whiff and my mouth instantly started watering.

That’s why I was over the moon to find DeLallo’s Hot and Spicy Pesto. One whiff and my mouth instantly started watering.

This pasta salad’s beauty lies in its simplicity. It only requires six ingredients, so when we choose our ingredients, we want to make them the best they can possibly be.

Starting with the star: the pasta. I am currently having a moment with pasta. Specifically, DeLallo’s Organic Whole Wheat Fusilli. It’s 100% whole wheat, which means you’re getting pure, wheaty goodness with this stuff. I love that it’s a bit chewier than normal pasta because it gives some texture to this pasta salad!

Next, the veg. I didn’t want to go too crazy with the vegetables here, so I simply roasted off some broccoli and peppers. Roasting is:

We roast vegetables constantly. Pop them on a baking sheet with oil, salt, and pepper, and roast until caramelized and tender.

Caramelized vegetables are the best kind of vegetables. Trust me. And feel free to make them ahead! They stay good in the fridge for a few days.

Now we’ve talked about the sauce, the Hot & Spicy Pesto. As the name implies, it’s got a kick. That’s why I opted to add some creamy feta to the mix. I don’t eat cheese often, but this salad totally needed a “cooling” ingredient like feta. I was tickled with this choice because it also added an addictive saltiness that I just loved.

And that’s that! A Spicy Vegetarian Pasta Salad ready for your next picnic or BBQ! I took a batch over to my parents’ house for Father’s Day, and it was a hit with my spice-loving family!
