Gnocchi with Cherry Tomatoes and Garlicky Panko Breadcrumbs

  • First, create garlicky breadcrumb topping. Toast Panko breadcrumbs in 1 tablespoon of olive oil with 1 clove of chopped garlic. Once golden brown and fragrant, remove from heat and set aside.
  • Bring a large pot of salted water to a boil for gnocchi. Cook gnocchi according to pasta instruction. Drain, reserving 1/2 cup of pasta cooking water to finish dish.
  • Meanwhile in a large saucepan, warm 2 tablespoons of olive oil on a medium setting. Add tomatoes and garlic. Cook until tomatoes burst and garlic becomes fragrant and golden. Toss with hot gnocchi in the saucepan. Stir in fresh parsley. Add pasta water to pan if desired. Cook together for 2 minutes to marry flavors.
  • Serve topped with toasted breadcrumbs and grated cheese.
