  • Preheat oven to 375 F. Cover a baking sheet with a layer of parchment paper.
  • Arrange prosciutto on the baking sheet and bake until crispy, about 10-12 minutes. Remove from oven and set aside.
  • Meanwhile in a saucepan on medium-low heat, add the cream. Heat until just warm.
  • Add the Gorgonzola cheese. Press down on the cheese with the back of a spoon to break it up and to help it melt into the cream. Once the cheese has melted, add the fig spread. Allow sauce to simmer on low 3 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the top, about 4 minutes. Remove gnocchi with a slotted spoon and add directly to the cheese sauce in the pan.
  • Divide gnocchi into 4 bowls. Serve topped with arugula and toasted walnuts.
