For ease of rolling, warm tortilla between two slightly damp paper towels in the microwave for about 20 seconds.
Lay tortilla out flat and spread with a thin layer of hummus. Begin layering ingredients, careful to keep ingredients within the center third of the tortilla. We start with spinach leaves, then top with shredded chicken, feta cheese, olives and peppers. Use a drizzle of oil from the peppers for added flavor.
Fold in the top and bottom of tortilla by about 1-2 inches. Tuck in one side and roll to enclose fillings. To eat at a later time, tightly wrap with plastic or freezer paper. Refrigerate.
