Greek Feta and Olive Stuffed Meatballs

  • Preheat oven to 400°F.
  • In a large mixing bowl, combine ground beef, ground pork, onion, breadcrumbs, pine nuts, egg, garlic, herbs, salt and pepper. Mix evenly until combined.
  • To create meatballs, scoop about 2 tablespoons of the meat mixture into a small ball. Press 1 cube of feta and 1 olive half into the center. Seal meat tightly around the cheese and olive. Repeat with remaining meatball mixture, cheese and olives.
  • Place meatballs on baking sheet in a single layer. Drizzle with olive oil and toss gently until lightly coated. Bake until the meatballs are browned and cooked through, about 25 minutes.
  • Meanwhile, prepare the dipping sauce. Combine yogurt, mint, garlic, lemon zest, lemon juice and anchovies in a small bowl. Season to taste with salt and pepper.
  • Arrange meatballs on a serving platter. Serve garnished with lemon wedges and a side of the dipping sauce.
