This is no ordinary picnic pasta salad: A hearty toss up of grilled pesto chicken, mezzi rigatoni, sun-dried tomatoes, arugula and toasty pine nuts in a creamy basil pesto dressing.

  • Preheat grill to medium-high setting.
  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions. Drain. Rinse and allow to cool.
  • In a mixing bowl, whisk Simply Pesto® with 1/4 cup olive oil to combine. Coat chicken breasts with pesto mixture.* Place chicken on grill rack and grill for about 5 minutes per side, or until completely cooked through. Remove from heat and cut chicken into 1/2-inch strips.
  • To create dressing: whisk dressing ingredients together in a separate bowl until fully incorporated.
  • Combine chicken, pasta, sun-dried tomatoes, arugula and pine nuts in a large serving bowl. Toss with dressing to coat.
  • * - If possible, marinate chicken in pesto for 2 hours prior to grilling for heightened flavor.
