Mediterranean Quiche

  • Preheat oven to 400°F.
  • Press puff pastry sheet into a 10” cast iron skillet, covering sides and bottom. Line crust with parchment and fill with dried beans or pie weights. Bake for 20 minutes. Remove paper and beans and bake longer, until golden brown, about 8-10 minutes. Let cool and reduce oven to 375°F.
  • Meanwhile, heat oil in a skillet over medium-high heat. Sauté spinach until wilted, about 5 minutes. Set aside.
  • In a mixing bowl, combine olives, peppers, tomatoes and onion. Set aside.
  • In a separate mixing bowl, whisk eggs until smooth. Add cream, milk, salt and pepper to the bowl. Whisk well to combine.
  • First, arrange wilted spinach on the bottom of the cooled pastry crust. Top with olive mixture and pour egg mixture into crust, stopping just short of the top. Sprinkle with crumbled goat cheese.
  • Bake quiche for 10 minutes. Reduce oven to 325°F, and continue to bake until filling is just set. Allow to cool for 1 hour before serving.
