  • In a large skillet, heat olive oil on a medium-heat setting. Add garlic and mushrooms. Saute mushrooms until cooked down and golden brown, about 8 minutes.
  • Reduce heat to a medium setting and stir in Taleggio. Once cheese is melted and fully incorporated, remove from heat. Cover and set aside.
  • In a medium-sized saucepot, bring water, broth and butter to a boil. Slowly whisk in polenta. Continuously stirring, cook polenta until it begins to thicken, about 1 minute. Turn off heat. Stir in cheese.
  • Serve immediately topped with mushrooms and a generously sprinkle of Parmigiano.
