Greek Salad

Using some of the Mediterranean's most favored ingredients, toss a fresh salad as a side or enjoy as a meal. A homemade vinaigrette goes a long way.

Ingredients:

Dressing:

  • 2 tablespoons DeLallo Extra Virgin Olive Oil
  • 1 tablespoon DeLallo Imported Red Wine Vinegar
  • Salt and pepper

Salad:

  • 2 cucumbers, sliced lengthwise and halved
  • 1 cup cherry tomatoes, halved
  • 1 cup DeLallo Pitted Calamata Olives
  • 1 cup Italian flat-leaf parsley
  • 1/4 cup mint leaves, roughly chopped
  • 1/2 pound DeLallo Imported Greek Feta, sliced
  • Fresh ground black pepper

Directions:

For the dressing: whisk together the oil, vinegar, salt and pepper vigorously.

Toss the cucumbers, tomatoes, parsley, mint and olives in a large bowl along with the dressing, leaving some to drizzle at the end.

Place the dressed salad onto a serving plate. Top with the sliced feta and fresh ground pepper; drizzle with the remaining dressing.
