A unique pasta salad using your favorite pillowy potato pasta! This Gnocchi Caprese Salad is a delicious way to use summer’s fresh harvest of vibrant tomatoes and fragrant basil.

Ingredients

1 (16-ounce) package DeLallo Potato Gnocchi
2 cups cherry tomatoes, halved
2 cups fresh mini mozzarella balls
1 handful fresh basil
Salt and pepper to taste
¼ cup DeLallo Simply Pesto® Traditional Basil Sauce

Directions

Bring a large pot of salted water to a boil. Cook the gnocchi according to the package directions. Gently drain and rinse to prevent sticking.
In a large serving bowl, combine the halved cherry tomatoes, mini mozzarella balls, chopped basil and cooked gnocchi.
Add in the pesto and gently toss to combine. Chill until ready to serve.
