Calamata Tapenade Cheese Melts

The rich, ripe flavor of Calamata olives in this tapenade make for the perfect mozzarella mate.

Ingredients:

  • 6 tablespoons DeLallo Calamata Olive Tapenade (see recipe here)
  • 10 slices dense, Italian bread, about 1/2-inch thick
  • 1 pound fresh mozzarella cheese, sliced thin
  • 2 tablespoons Delallo Extra Virgin Olive Oil

Directions:

Spread a tablespoon of the tapenade on 5 slices of bread. Top with two thin slices of mozzarella, then the remaining slice of bread to make a sandwich.

Heat the olive oil in a large nonstick skillet over medium heat.  When the oil is hot, place the sandwiches in the pan and cook on each side until crisp and golden brown.

Serve warm.
