Greek Cucumber Dip - Tzatziki

This cool cucumber dip is a refreshing way to enjoy a Greek flavor with a spread of Greek olives, fresh vegetables & pita or simply as a sauce for meats or poultry.

Ingredients:

  • 2 cucumbers, seeded and peeled
  • 1 pint plain Greek yogurt, or thoroughly drained plain yogurt
  • 1 tablespoon salt
  • 1/2 cup sour cream
  • 1 tablespoon DeLallo Golden Balsamic Style Vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon DeLallo Extra Virgin Olive Oil
  • 1/2 clove garlic, minced
  • 2 teaspoons fresh, minced dill
  • Pepper

Directions:

Grate cucumber and toss with salt. Drain as much juice from cucumber as possible using a cheesecloth or towel.

In a large bowl, mix yogurt and grated cucumber; combine with sour cream, vinegar, lemon juice, olive oil, garlic and dill. Add salt and pepper to taste.

Serve chilled.
