Creamy Chicken Salad with Olives & Artichokes

This cool, creamy chicken salad is brimming with tart olives and earthy artichokes— a perfect go-to recipe for the warmer weather. Lavish your ciabatta or pita with the bright Mediterranean flavors you love!
- 4 cooked chicken breasts, sliced
- 1 (12-ounce) jar DeLallo Marinated Artichokes, drained
- 1/3 cup DeLallo Olives Jubilee, sliced
- 1/2 cup mayonnaise
- 2 tablespoons DeLallo Lemon Juice Plus
- 2 tablespoons chopped Italian parsley
- 1 teaspoon DeLallo Minced Garlic in Water
- Salt and pepper
Gently toss chicken with artichokes and olives in a large bowl. In a separate bowl, combine mayonnaise with lemon juice, parsley and garlic. Toss mixture with chicken. Salt and pepper to taste.
