Fava Bean Salad with Pecorino Toscano

Insalata di Fave - the young fresh fava beans are truly appreciated in this simple fresh salad.

Ingredients:

1 lb mixed salad greens such as arugula, boston, green or red leaf lettuce

1/4 lb young Pecorino Toscano cheese, thinly sliced

1 1/2 lbs fresh fava beans, shelled (1 1/2 cups shelled)

1/4 cup DeLallo Extra Virgin Olive Oil

3 Tbsp fresh squeezed lemon juice

pinch of salt and pepper

 

Directions:

To prepare the fava beans:  Take the shelled beans
and drop them in boiling salted water for 30 seconds to loosen the
outerskin. Remove and place into ice water, and peel off the beans
thick waxy outer covering.

Combine the salad greens in a large bowl and toss with the olive oil, lemon juice, salt and pepper. Plate the salad on four serving dishes, place a couple slices of the cheese on top of each salad.  Scatter the top of each salad with the fava beans
