Fava Beans and Potatoes

Ingredients:

2 cups shelled fava beans (about 2 pound fresh fava beans unshelled)

2 medium potatoes, peeled and cubed

3 Tablespoons DeLallo Extra Virgin Olive Oil

1 medium onion, thinly sliced

3 ripe tomatoes roughly chopped, or 3 Tablespoons DeLallo Crushed Tomatoes

Salt and Pepper to taste

 

 

Directions:

To prepare the fava beans:  Take the shelled beans and drop them in boiling salted water for 30 seconds to loosen the
outerskin. Remove and place into ice water, and peel off the beans thick waxy outer covering. Place the beans to the side.  Cook the cubed potatoes until tender, drain and place on the side.

Meanwhile in a medium saucepan heat the olive oi.  Add the onion and saute until soft and translucent, about 5 minutes.  Add the tomatoes and cook about 3 minutes.  Add the fava beans and potatoes to the saucepan. Cook for about 10 minutes to allow the flavors to come together.  If needed, add a a touch of hot water or stock to keep a moist consistency. Season with salt and pepper to taste.
