Insalata Caprese (Tomato, Mozzarella & Basil Salad)

The red of the tomatoes, white of the mozzarella and green of the basil are the colors of the Italian flag, so this salad is often called insalata tricolore (the three colors of the flag) and can be a fun way to present a theme for an Italian evening. It makes a lovely, fresh antipasto.

Ingredients:

  • fresh mozzarella cheese
  • ripe, red tomatoes
  • fresh basil
  • DeLallo Extra Virgin Olive Oil
  • salt
  • DeLallo Jumbo Calamata Olives

Directions:

Choose a good fresh mozzarella: large rounds will be torn smaller; the small ciliegine mozzarella are left whole. You really do need the flavor of ripe tomatoes for this to be tasted at its best. If it is the wrong season to get them at their ripest, consider adding extra olives or some sun-dried tomatoes for more flavor.

If you're using large mozzarella, gently tear the cheese and place onto the serving platter.

Slice the tomatoes into medium thick slices and arrange amongst the mozzarella.

Tear the basil leaves and scatter around the dish.

Sprinkle with salt.

Drizzle with your best extra virgin olive oil. Nestle some gleaming black olives at the center of the circle for contrast.
