Mediterranean Orzo Salad

Whether you're preparing a backyard picnic or a side for your summery meals, this orzo pasta salad is the perfect way to enjoy all the vibrant flavors of the Mediterranean in one dish! We load it up with tart Calamata olives, aromatic mint, roasted red peppers, crumbled feta and toss it with our Whole Wheat Orzo for a stunning presentation of bold flavors.

Ingredients:

Dressing:

  • 3 tablespoons DeLallo Golden Balsamic Style Vinegar
  • 1 tablespoon DeLallo Lemon Juice Plus
  • DeLallo Natural Coarse Sea Salt
  • Freshly ground black pepper
  • 1/4 cup DeLallo Extra Virgin Olive Oil

Salad:

  • 1 (12-ounce) jar DeLallo Red Roasted Peppers in Water, drained & chopped
  • 1 (15.5-ounce) can DeLallo Chickpeas, drained
  • 1/2 cup DeLallo Pitted Seasoned Calamata Olives, chopped
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped scallions
  • 1 (1-pound) package DeLallo Organic Whole Wheat Orzo, cooked*
  • 6 ounces DeLallo Feta, crumbled
  • DeLallo Natural Coarse Sea Salt
  • Freshly ground black pepper

Directions:

To create dressing, combine vinegar, lemon juice, salt and pepper in a mixing bowl. Whisk together to incorporate. Introduce oil in a steady stream while whisking. Set aside.

In a large serving bowl, combine peppers, chickpeas, olives, mint and scallions. Toss with cooled orzo. Add dressing and mix well to coat. Once all ingredients are incorporated, gently fold in feta. Salt and pepper to taste.

Serves 6 to 8
