Whole Wheat Shells, Sweet Peas & Tuna Salad

A tasty Italian pasta salad using young, sweet peas, tuna and whole wheat shell pasta, dressed in a homemade red wine vinaigrette. It's a quick-and-easy recipe for your healthy pasta fix on the go!

Ingredients:

  • 1 (1-pound) package DeLallo Whole Wheat Shells
  • 1 1/2 cups frozen young peas, thawed
  • 1/4 cup chopped red onion
  • 1/2 cup chopped Italian, flat-leaf parsley
  • 2 (6-ounce) cans tuna, drained
  • 1/4 cup DeLallo Red Wine Vinegar
  • 1/2 teaspoon Dijon mustard
  • DeLallo Natural Coarse Sea Salt
  • Freshly ground black pepper
  • 1/3 cup DeLallo Extra Virgin Olive Oil

Directions:

Bring a large pot of salted water to a boil. Cook pasta for al dente texture, according to package instructions. Drain, then rinse under cold water.

In a large serving bowl, combine pasta, young peas, onion, parsley and the tuna.

To prepare dressing, in a separate bowl, whisk together the vinegar, mustard and the salt and pepper to taste. Once combined, slowly whisk in the olive oil. Toss dressing with pasta and ingredients. Serve refrigerated or at room temperature.
