Chocolate Hazelnut Sandwiches

A delicious cookie that gives you two for one! With thin, crisp pistachio cookies and a nutty chocolate spread squished between, these sweet rounds are sure to make an impression on your guests. Sprinkle generously with sparkling sugar for a real holiday treat!

Ingredients:

  • 2 1/2 sticks ounsalted butter (1/2 stick cold and 2 sticks at room temperature)
  • 1/2 cup rolled oats
  • 1 3/4 cup chocolate hazelnut spread
  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt
  • 1/4 cup coarse, decorating sugar (optional)

Directions:

In a large saucepan over medium-heat, melt 4 tablespoons cold butter. Stirring frequently, add oats and cook for about 5 minutes, or until lightly golden. Remove from heat and place in a large bowl. Set aside.

Whisk warm butter, 3/4 cup chocolate hazelnut spread, brown sugar and sugar in a large bowl. Beat until mixed thoroughly and fluffy, about 3 minutes.

In a separate bowl, mix flour, baking soda and kosher salt.

First, add dry mixture to butter mixture. Combine well. Next, add oats and mix until dough is formed.

Form tablespoon-sized balls with dough using flour to keep dough from sticking. Flatten each ball until they are about 1/8-inch thick. Place cookies on baking sheet. Repeat until dough is used. Give cookies 1 inch space on sheet.

Sprinkle with coarse sugar and bake for about 12 to 15 minutes, or until cookies are golden.

Once cooled, spread about 1 tablespoon of chocolate hazelnut spread over half of the cookies (on flat side). Sandwich cookies, flat sides together.
