Fusilli with 3 Cheese Pomodoro

This rich, flavorful three-cheese Pomodoro sauce comes together quickly for an easy weeknight dinner. We like to pair it with Fusilli col Buco, but any long-cut pasta will do!

INGREDIENTS

DIRECTIONS

  1. Cook pasta according to package. Drain.
  2. Heat oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant and beginning to brown, about 2 minutes.
  3. Carefully add the tomatoes, lemon zest, juice and basil stems to the pan. Reduce heat to low and simmer for 25 minutes.
  4. Remove and discard the garlic and basil stems.
  5. Stir in the cheeses. Add cooked pasta to the sauce and stir to coat completely. Cook for an additional 2 minutes to thicken the sauce.
  6. Stir in the chopped basil and serve with additional Pecorino-Romano.
