Fusilli with 3 Cheese Pomodoro

This rich, flavorful three-cheese Pomodoro sauce comes together quickly for an easy weeknight dinner. We like to pair it with Fusilli col Buco, but any long-cut pasta will do!

  • Cook pasta according to package. Drain, reserving 1/2 cup of the pasta water.
  • Heat oil in a large skillet over medium-high heat. Add the garlic and cook until fragrant and beginning to brown, about 2 minutes.
  • Carefully add the tomatoes, lemon zest, juice and basil stems to the pan. Reduce heat to low and simmer for 25 minutes.
  • Remove and discard the garlic and basil stems.
  • Stir in the cheeses. Add cooked pasta to the sauce and stir to coat completely. Cook for an additional 2 minutes to thicken the sauce.
  • Stir in the chopped basil and serve with additional Pecorino-Romano.
