INGREDIENTS

  • 1/3 cup + 1 tablespoon Jamacian Jerk Seasoning (1 tbsp. garlic powder, 3 tsp. cayenne pepper, 2 tsp. onion powder, 2 tsp. dried thyme, 2 tsp. dried parsley, 2 tsp. sugar, 2 tsp. salt, 1 tsp. paprika, 1 tsp. allspice, 1/2 tsp. black pepper, 1/2 tsp. dried crushed red pepper, 1/2 tsp. ground nutmeg and 1/4 tsp. ground cinnamon)
  • 1 (16-ounce) package Gluten-Free Pasta Corn & Rice Penne Rigate
  • 3 boneless skinless chicken breasts
  • 2 tablespoons DeLallo Extra Virgin Olive Oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • ¼ cup chicken broth
  • ½ cup heavy cream
  • ½ cup freshly grated Imported Italian Parmigiano-Reggiano

DIRECTIONS

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instruction. Drain.
  2. In the meantime, season the chicken by rubbing the jerk seasoning all over to coat.* Heat 1 tablespoon of oil in a large skillet over medium heat. Add the chicken to the pan and sauté until cooked through and golden brown, about 8 minutes per side. Remove chicken from the pan and set aside to rest.
  3. Add remaining oil and the peppers to the pan. Cook until peppers soften, about 4-5 minutes.
  4. Stir in the green onions and garlic. Cook until they become fragrant, about 1 minute. Season with 2 teaspoons or more of the jerk seasoning.
  5. Stir in chicken stock and cream. Continuously stirring, simmer until sauce thickens, about 5 minutes. Add the Parmesan and stir until melted. Slice chicken and add to the pan. Add pasta and stir to combine.
  6. Divide among bowls or serve family-style.
  7. *If making homemade jerk seasoning, combine spice ingredients in a small bowl. Seasoning can be stored in an airtight container for up to 3 months.
