Bread: We love this sandwich on focaccia bread, but for a sturdier sandwich, use ciabatta rolls.

Pesto: If you love basil as much as we think you do, basil pesto is a must. Just be sure to pick a great quality pesto—whether you make your own or choose an authentic Italian basil pesto. We spread a nice layer on the bottom of the sandwich, but if you’re a hardcore pesto fan, don’t be afraid to spread a little on the top of the sandwich too!

Arugula: The slightly bitter, peppery flavor of arugula is an excellent complement to the flavors of fresh tomato, milky mozzarella cheese and tangy-sweet balsamic glaze.

Cheese: Fresh mozzarella is super creamy and slightly sweet—the perfect cheese to take on the bold and herbaceous flavors of the caprese. It’s also a great contrast of textures.

Tomato: You can choose your favorite tomato, but be sure it’s a flavorful one. Juicy, red-ripe, medium-sized tomatoes work best. We love ‘em fresh from the garden.

How To Make A Caprese Sandwich

Caprese sandwiches are super easy to make. There is no heat involved and it takes mere minutes to prepare the ingredients.

Prepare the bread. Slice the focaccia or ciabatta in half. Spread a layer of pesto on the bottom half, cut-side up.

Create the sandwich. Layer with arugula, mozzarella and tomato. Drizzle with the balsamic.

Finish and serve. Sprinkle with fresh basil leaves and place the top half of the focaccia or ciabatta.

Top Tips

To store or transport, wrap the sandwiches in parchment paper. Use twine or tape to keep them closed. Do not wrap them with plastic or anything airtight.

Substitutions And Additions

Olive oil. Some like to moisten the bread with olive oil. You can do this instead of the basil pesto or in addition to. Up to you!

Arugula. You can choose to substitute the arugula if you aren’t a fan. We love it, but some prefer a tamer green like spinach.

Bread options. We love it on focaccia but there are other ways to create a stunning caprese sandwich. Crusty French baguette, ciabatta rolls or even hard Italian rolls can be used for this caprese sandwich recipe.

Basil aioli. Create a creamier basil sauce with the simple addition of mayo. Depending on how much you like, you may enjoy 1:1 parts pesto to mayo, or even, 1:2. Add a little pesto to your mayo at a time to find the perfect ratio.
