Pesto Grilled Salmon and Pasta

Fresh, tasty and delicious, this pesto grilled salmon from @feelgoodfoodie is easy and simple to make. Salmon kabobs are brushed with pesto before being grilled and served with a parmesan pesto pasta. A must have for summer!

Directions

  • Bring a large pot of water to a boil. Cook pasta according to package directions. Reserve 1 cup pasta water and drain.
  • Soak wooden skewers for at least 1 hour. Preheat a grill or grill pan to medium high heat.
  • Trim the ends of 2 lemons and thinly slice. Add the salmon cubes and lemon slices folded in half onto the skewers (makes 5-6 skewers). Brush both sides of salmon skewers with half of the jar of pesto.
  • Grill salmon skewers until salmon is cooked through and opaque, about 4 minutes per side.
  • Return drained pasta to the same pot over low heat. Add butter, parmesan, remaining pesto and juice of remaining lemon.
  • Season with salt and pepper and gradually add in reserved pasta water until the sauce is glossy.
  • Garnish with fresh basil and chili flakes, top with salmon skewers and serve.
