Pesto Grilled Salmon and Pasta

Fresh, tasty and delicious, this pesto grilled salmon from @feelgoodfoodie is easy and simple to make. Salmon kabobs are brushed with pesto before being grilled and served with a parmesan pesto pasta. A must have for summer!

INGREDIENTS

DIRECTIONS

  1. Bring a large pot of water to a boil. Cook pasta according to package directions. Reserve 1 cup pasta water and drain.
  2. Soak wooden skewers for at least 1 hour. Preheat a grill or grill pan to medium high heat.
  3. Trim the ends of 2 lemons and thinly slice. Add the salmon cubes and lemon slices folded in half onto the skewers (makes 5-6 skewers). Brush both sides of salmon skewers with half of the jar of pesto.
  4. Grill salmon skewers until salmon is cooked through and opaque, about 4 minutes per side.
  5. Return drained pasta to the same pot over low heat. Add butter, parmesan, remaining pesto and juice of remaining lemon.
  6. Season with salt and pepper and gradually add in reserved pasta water until the sauce is glossy.
  7. Garnish with fresh basil and chili flakes, top with salmon skewers and serve.
