Roasted Corn and Tomato Bruschetta Orzo

  • Bring a large pot of salted water to a boil. Cook pasta according to package instruction. Drain.
  • Heat oil is a sauté pan over medium heat. Add corn and cook until heated through, about 3-5 minutes. Add bruschetta to the pan and cook for another 3 minutes.
  • Transfer orzo to a large serving bowl. Add bruschetta mixture, peas and onions. Toss well to combine. Serve sprinkled with freshly grated cheese.
