Grilled Corn Pesto Tortellini Salad

No ordinary pasta salad, this cheesy tortellini toss is an incredible blend of savory smoky flavors dressed in our fragrant, basil-packed Simply Pesto® Sauce.

INGREDIENTS

• 2 tablespoons DeLallo Extra Virgin Olive Oil
• 4 tablespoons DeLallo Simply Pesto® Traditional Basil Sauce
• 2 ears grilled corn, cut off the cob
• 1 (15.5-ounce) can DeLallo Black Beans
• 1/2 jar (6 ounces) DeLallo Roasted Red Peppers, cut into strips
• 1/2 pint cherry tomatoes, halved
• 2 (8.8-ounce) packages DeLallo Three-Cheese Tortellini
• Salt and pepper to taste

DIRECTIONS

1. Bring a large pot of salated water to boil.
2. Cook the tortellini according to package instructions.
3. Drain, rinse and cool.
4. Meanwhile, in a mixing bowl, whisk together olive oil and pesto until well combined.
5. Add corn, beans, peppers and tomatoes to the bowl. Toss to coat.
6. Gently stir in cooled tortellini pasta.
7. Serve chilled.
