Ingredients

2 cups broccoli, chopped into bite-sized pieces
2 bell peppers, chopped into bite-sized pieces
2 Tbsp. olive oil
salt + pepper
1 lb. DeLallo Organic Whole Wheat Fusilli, cooked according to package instructions
1 jar hot & spicy pesto
7 oz. feta, crumbled

Directions

Preheat your oven to 425 degrees F. Line a baking sheet with parchment paper.
Add your broccoli and peppers to the baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 20-25 minutes, or until the vegetables are caramelized and tender.
Add your pasta and cooked vegetables to your serving bowl. Pour your pesto over top, and top with crumbled feta. Toss to combine. Serve warm, room temperature, or cold from the fridge!
